This chocolate icing is dangerously addictive…and completely sugar-free! Pureed dates and coconut butter make this frosting come out so smooth and silky. You can use it to frost cakes, cupcakes or as a topper for brownies. If you have kids like mine who loved Nutella before embarking on a Paleo or autoimmune diet and seriously miss it, you can even use this as a Nutella-like dip for apples or other fruit on special occasions. Just add a little more coconut milk to give it a consistency more like a spread than a frosting.

Chocolate Date Frosting (Paleo)

Yields: Enough frosting to cover 12 cupcakes

Ingredients:

  • 1 cup coconut milk (additive free)
  • 1/2 cup coconut butter
  • 1 cup whole pitted dates, soaked in hot water for five minutes until softened
  • 1/3 cup pure cacao or cocoa powder

Instructions:

Soak dates in hot water for approximately five minutes until softened. Drain. Set aside. Place coconut butter with coconut milk in a microwave safe bowl and microwave on high for 1.5 minutes until coconut butter is slightly melted and coconut milk is slightly warm. Place all ingredients in a food processor or blender. Blend/puree until completely combined and a smooth, silky texture is reached. Place in the fridge for 10 minutes to cool the frosting to make it easier for icing. If making ahead, leave in fridge for up to 24 hours and then let stand at room temperature for 10-15 minutes before icing.
