I’m so happy with this recipe. These have great texture and taste. PLUS they are so simple and easy to make – only one bowl needed and a few minutes of your time! If, like us, you have been seriously missing bread in your diet these will totally satisfy that craving. As I write this post I have a plate of strawberry spread with a warm bun from the oven and it’s taking all my will power to save the rest for my kids (who still have not come down for breakfast on this summer morning at 9:25am!).

Rolls/Hamburger Buns (AIP, Paleo)

Yields: Approximately 10 buns/rolls

Ingredients:

  • 1.5 cups cassava flour
  • 1 cup tapioca flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 can coconut milk, room temperature
  • 1/4 cup arrowroot starch or tapioca flour for rolling the dough in

Instructions:

Preheat oven to 350. In a mixing bowl, combine all dry ingredients and mix well, making sure there are no clumps in the flours. Add the coconut milk and stir until a dough consistency is reached. Take a baking sheet and line it with parchment paper. Take a small plate and place arrowroot or tapioca starch on it. Taking a small amount of dough in your hands form a ball (the ball should be larger than a golf ball but smaller than a tennis ball – sorry I know that’s a very inaccurate measurement! You’ll get the sense of it though. See the pictures below to get a better idea.). Roll the ball in the arrowroot/tapioca flour on the plate. Place on the baking sheet and gently press down (not too much though!). Place rolls in preheated oven and bake for 30 min or until golden brown and cooked through. Enjoy!
