Fried “Rice”

This fried rice is a big hit with my kids. They love the taste and I love getting as many greens into them as I can with it! It comes together really quickly, making it a great weeknight dish. You can top it with pretty much any cooked meat. It also goes really nicely with salmon. I’ve added a lot of cabbage and kale in this version, but you could swap that with other green veg if you want to.
Fried “Rice” (AIP, Paleo)
Ingredients:
- 3 tablespoons olive oil
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 3 stalks celery, chopped fine
- 1 500g bag frozen cauliflower rice
- 2 cups green cabbage, chopped fine
- 2 cups frozen (or fresh) chopped kale
- 1/4 teaspoon dried thyme
- 3 tablespoons coconut aminos
- sea salt and pepper (omit for AIP) to taste
Instructions:
In a large wok or skillet, heat oil over medium-high heat. Add in onion, celery and garlic. Stir and fry until softened. Add in cauliflower and continue to stir and fry. Add in frozen cauliflower rice. Continue stirring and frying until cauliflower is heated through and fluffy. Add in chopped frozen or fresh kale. Continue to stir and fry. Add thyme, coconut aminos and salt and (if using) pepper. Stir and continue to cook until kale is completely heated through. Remove from heat and serve hot.
