 One of the hardest things for KT and the rest of us starting AIP was saying goodbye to all the baked goods we loved. I have to say, I got pretty darn good at making gluten free bread! And my banana chocolate muffins…I still have some heart ache over letting that go! However, there is a life that includes delicious baked goods while on AIP and paleo. Getting to know the new flours was a bit daunting at first so I thought I’d do a quick post on what flours to buy and which are my favourites. 

First, I recommend storing all your flours (you’re going to be using quite a few) in a bin in your fridge. This keeps them fresh and organized. Keep the opened ones in your fridge and always keep a back up package in your pantry for when you are mid-recipe and realize you’ve run out! As my husband likes to quote, “One is none and two is one.”

My favourite grain-free, gluten free flour to use is green banana. I hadn’t even heard of this flour before we began AIP. It’s got a great flavour that isn’t over-powering and it has a very, very low glycemic index. An all round amazing flour. I really like using this brand:

My second favourite is tigernut flour. It adds a lot of nutrients to your baked goods and has a really nice nutty flavour (but it’s not a nut!). Here’s the brand I get:

The other flours/ingredients to have in your fridge flour bin are the following (of course, make sure they are all gluten free and free of any additives!):

-Cassava Flour

-Tapioca Starch

-Arrowroot Flour/Starch

-Carob Powder (to replace cocoa)

-Coconut Flour 

-Baking Soda

-Coconut Flakes
