AIP Camping
Our girls love camping. When KT had her last bad flare up of pericarditis in May, we really weren’t sure camping was going to happen. Incredibly, we have had two successful camping trips this summer! Seeing her do all the things she loves has been nothing short of a miracle.
As we prepared for camping, our girls were a little worried that they would miss out on all the camping treats they’d have in the past. Well, they happily discovered there are new (and better) camping foods on AIP! Here’s a few things that worked out well for us.
Marshmallows
So, what’s a camping trip without the marshmallows, right? The girls were so happy with how our homemade ones turned out. I went with a recipe from one of my favourite sites, Heal Me Delicious. Basically everything this woman makes is amazing. You can find her marshmallow recipe here. I really did wonder why I’d never thought to make these before! One draw back with these, however, is that they really didn’t roast well. That was just fine, though, because we ended up getting creative with other yummy things to roast. And, the whole s’more experience was just a little different using sweet potato chips. The salty and sweet made for a great flavour combo and the kids really didn’t seem to miss the gooey, chocolate version.
Campfires
Since we couldn’t really roast marshmallows, we ended up discovering that dates are delicious when roasted. We also roasted strips of bacon. When we put the bacon with the roasted dates…oh my! I know people have likely known about this flavour combo for eons ago but it was new to us and our taste buds. We were happy campers. Everything really does taste better wrapped in bacon!
Pre-made Mason Jar Meals
You may well be the kind of super mom who could very successfully manage an AIP camping trip in the backwoods with nothing around you and no electricity. You’re awesome. That’s not me. We got an electric site both times and we picked up a mini fridge off Kijiji for a reasonable price. This really made things easier for me. I pre-made a lot of our meals and froze them in mason jars. Before we left I popped them in the fridge. Although the fridge wasn’t plugged in for the drive to the camp ground, everything stayed frozen. Our drive was about two hours both trips.
The meals I froze for the trips were ones I could dump into a pot and heat. Stews, chili, etc. My kids’ favourite lunch is cooked ground beef or lamb (grass-fed!) with green veggies and bone broth. If I have an avocado on hand I’ll slice that in too. Cook up some cassava pasta and you’ve got a winner!
