Taking options like sandwiches out of the lunch picture might leave you wondering what to make your kids for lunch, especially with school starting in a few weeks. I have a confession to make. I actually homeschool my kids so packing lunches isn’t usually a worry for me. However, they do head out on a lot of daytime outings where I need to prep lunch. And even if we do homeschool, my kids still have to eat lunch! I typically will eat a huge salad with a bunch of things added in but that won’t cut it for my kids. Here are a few tips and ideas when it comes to lunches for kids on AIP.

A go-to lunch I make is what I like to call Greens and Ground Beef. Getting KT to eat enough greens is a serious challenge for me. EC is incredible on the AIP. She eats salads, green smoothies, and pretty much anything else I serve up to her. KT not so much. However, this recipe she loves. As with everything I make, it’s simple. Make this in bulk and freeze in jars for fast lunches or dinners

Greens and Ground Beef (AIP, Paleo)

Freezer friendly

Ingredients:

  • olive oil or avocado oil
  • 1 lb ground beef
  • 2-3 cups chopped spinach, kale, cabbage, brussel sprouts, bok choy, spinach or a mix of these
  • approx. 2 cups bone broth
  • 1 500g package frozen cauliflower rice
  • 2 tsp coconut aminos
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • sea salt and pepper (omit for AIP) to taste

Instructions:

Heat oil in large pot. Add ground beef and cook until browned. Add in bone broth, garlic powder, onion powder, coconut aminos, salt and (if reintroduced) pepper. Stir. Add in chopped green vegetables and frozen cauliflower rice. Cook covered until veggies are tender. Serve on its own or with a side of cassava pasta or spaghetti squash.

    Do you make your own cauliflower rice?

    Absolutely not! I mean, good on you if you do but you know me. I keep it as easy as I can. I buy my organic cauliflower rice from Costco. You can find it in their freezer section with the other frozen veg.
