I’m kind of embarrassed at the number of posts I’ve done about chocolate. I do make healthy things! But I’ve also been having some fun experimenting with chocolate recipes. I wanted to use a cookie recipe without tigernut flour. I love tigernut flour but it’s also really expensive. So, I came up with a recipe using cassava flour and (one of my faves!) green banana flour. By my second attempt at creating the recipe my girls gave me their approval. 
 
I also used date sugar. I like the unique flavour of date sugar but I find it can be overpowering if used in larger amounts. I put in only two tablespoons of date sugar as well as two teaspoons of raw, unpasteurized honey. While I used cocoa powder, you can easily substitute that with carob powder if you haven’t reintroduced cocoa yet. I also used collagen in the place of gelatin. I did this for the very unsophisticated reason that I had no gelatin left! Collagen doesn’t bind things as well as gelatin but it’s so good for us and these turned out great with it so it’s a keeper for this recipe.

Chocolate Cookies (AIP, Paleo)

Ingredients
3/4 cup cassava flour
1/2 cup green banana flour
1/2 cup cocoa powder (or carob powder for AIP)
1/4 cup collagen
1 teaspoon baking soda
2 tablespoons date sugar
1/2 cup palm shortening, melted
1/2 cup coconut oil, melted
1 teaspoon vanilla extract (alcohol and additive free)
2 teaspoons raw, unpasteurized honey
1 teaspoon apple cider vinegar
 
Instructions:
Preheat oven to 350. In mixing bowl, combine all dry ingredients. Set aside. In another mixing bowl combine all wet ingredients and mix well. Be sure the honey is completely mixed into the rest of the ingredients. Add dry ingredients to the wet ingredients and mix thoroughly. Line a baking sheet with parchment paper. Take a teaspoon size amount of cookie mixture in your hands and press it together into a tight ball. Place the ball on your parchment lined baking sheet and gently press down with your fingers. Once your sheet is full, place in preheated oven for approx 10-12 min. Enjoy!
