I love rainbow carrots. They are just so beautiful you can’t help but wonder at God’s creation! This Rainbow ‘Slaw is super easy to whip up and will make any dinner look pretty. Add it as a side to salmon, roast beef or just about anything else.

Rainbow ‘Slaw (AIP, Paleo)

Serves: 4-6 small side portions

Ingredients:

  • approx. 7 large rainbow carrots (preferably organic), peeled and finely grated
  • 1/4 slice of a small green cabbage, medium grated
  • 1 small cucumber finely sliced (or use spiralizer)
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp balsamic vinegar
  • one teaspoon raw, unpasteurized honey
  • sea salt to taste
  • optional: for more pep and flavour try adding 1/2 tsp finely grated fresh ginger or zest of one lime

Instructions:

In a medium mixing bowl, prep all veg as per descriptions above. Add vinegars, honey, ginger or lime if using and salt. Gently stir. Keep refrigerated until ready to serve. Best served fresh, or store in fridge for up to two days.
