Since cranberry sauce typically has a lot of sugar in it to counter the sharp taste of the cranberries, I decided to use monk fruit to sweeten the sauce rather than try to use honey or maple syrup. Although both of those pack some good nutrients, they are still high on the glycemic index. I decided to use monk fruit to save our pancreases! Monk fruit, although not approved for the AIP, is an acceptable Paleo sweetener. It’s all natural, derived from…well, monk fruit (also known as lo han guo) and has no glycemic value. Be careful, however that you purchase one that is 100% Monk Fruit and not mixed with an artificial sweetener, as most are. Here is the brand I use. I order it from amazon. It comes at a heavy price but is well worth it for the pure stuff. A very small amount also goes a long, long way so it will last for quite a while.

Sugar-free Cranberry Sauce (Paleo)

Serves: 6 adult portions

Ingredients:

  • 1 bag fresh cranberries (approximately 250g)
  • zest of 2 oranges
  • juice of 2 oranges
  • 1/4 teaspoon pure monk fruit
  • 1/2 cup water

Instructions:

In a medium sauce pan over medium heat, add cranberries, water, monk fruit, orange zest and orange juice. Simmer, covered, stirring often until cranberries have softened. Serve warm or cooled. Store in fridge for up to three days.
