These cookies turned out really yummy completely by accident when I tried adding applesauce to a cookie recipe I was trying to make that had turned out too dry. My kids ended up loving the soft, chewy texture so now it’s a recipe they ask me to use often.

Soft Chocolate Cookies (AIP, Paleo)

Yields: 2 dozen small cookies

Ingredients:

  • 1.5 cups cassava flour
  • .5 cups arrowroot flour
  • 1 teaspoon baking soda
  • 2 tablespoons grass-fed gelatin
  • 1/4 cup cacao powder (use carob powder for AIP)
  • 1/2 cup coconut oil, melted
  • 3/4 cup applesauce
  • 1 teaspoon vanilla
  • 1/4 cup raw honey
  • 1 teaspoon apple cider vinegar

Instructions:

Preheat oven to 350. In a bowl, mix together dry ingredients. In a separate bowl mix together all wet ingredients. Add dry ingredients to wet and mix thoroughly. Using a teaspoon, drop cookie mixture on a parchment lined baking sheet. Place in preheated oven and bake for approximately 15 minutes.
