Sautéed Ginger Chicken

This recipe is the creation of my big sister Bernadette! It comes together in just a few minutes using ordinary ingredients you likely already have on hand. It’s a comforting dish to eat on its own or try adding a side of cauliflower rice, mashed sweet potatoes or spaghetti squash.

Sautéed Ginger Chicken (AIP, Paleo)

Yields: 4 servings

Ingredients:

  • 3 cups cooked chicken breast, chopped into bite sized pieces
  • 3 large handfuls fresh baby spinach
  • 1 yellow onion, diced
  • 4 cloves garlic, chopped
  • 2 tablespoons fresh ginger, sliced
  • 3 large carrots, peeled then shaved
  • 2 tablespoons avocado oil
  • 1.5 cup bone broth (beef or chicken is fine)

Instructions:

In a large skillet, heat avocado oil over medium heat. Add diced onion. Sauté until softened. Add sliced ginger and garlic. Sauté a few minutes more to release ginger and garlic aroma. Add shaved carrot. Sauté until carrots are slightly softened. Add fresh spinach. Stir spinach into sauteed mixture. Add chopped cooked chicken and bone broth. Allow all ingredients to simmer together until chicken is completely heated through. Serve hot on its own or with a side of cauliflower rice, mashed sweet potato or spaghetti squash.
