These sweet potato poppers were a huge hit with my kids. They come together very quickly, particularly if you have a food processor to do the shredding for you. Keep these on hand for fast lunches, dinner or even breakfast! Really, you can’t go wrong with these! Freeze loads and keep them on hand. Serve them with a side of AIP/Paleo BBQ sauce or banana ketchup (yes, there really is such a thing as banana ketchup and it tastes amazing!!).
