I make this recipe a lot for my kiddos. They love them and they come together super fast, so I love them too! I used my two favourite flours in this one: tigernut and banana flour. To make this AIP compliant, just swap the cacao powder for carob powder.

One Bowl Chocolate Cookies (AIP, Paleo)

Ingredients:

  • 3/4 cup green banana flour
  • 1/2 cup tigernut flour
  • 1/4 cup cacao powder (use carob powder for AIP)
  • 1/4 cup arrowroot flour
  • 1 tsp baking soda
  • 1 tbsp gelatin
  • 2/3 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 tsp apple cider vinegar

Instructions:

Preheat oven to 350. Line baking sheet with parchment paper. In medium sized mixing bowl, combine all dry ingredients. Mix well, making sure all lumps are broken down. Add wet ingredients to dry and mix. Roll teaspoon size ball of dough in hands then place on tray and lightly press down. Leave adequate space between cookies (though they don’t expand too much). Bake in preheated oven for 15 min.
